The flavor transformation of Ganoderma lucidum: from fresh to processed

Imagine that freshly picked Ganoderma exudes a rich mushroom aroma and earthy aroma, while Ganoderma products that have been dried, crushed or extracted present completely different flavors - sweet caramel aroma, deep woody aroma and mellow sauce aroma. This change in flavor is the result of complex changes in internal substances during processing.

Researchers found through professional sensory evaluation:

Maltol and 5-hydroxymethylfurfural: The "sweetness ambassadors" of processed Ganoderma lucidum mainly come from the Maillard reaction (reaction of amino acids and sugar under heating conditions), giving the product a caramel-like sweet aroma.

Acetic acid and isovaleric acid: Provide pleasant sour and soy aroma, enriching the flavor of Ganoderma lucidum.

To confirm these findings, the researchers conducted an ingenious validation experiment:

Flavor reconstruction: The identified key aroma compounds were mixed in their original proportions to successfully simulate a flavor profile that is very similar to real Ganoderma lucidum.

Missing experiments: Like a jigsaw puzzle, remove one compound from the mixture one at a time and observe the flavor changes. When 1-octen-3-ol was removed, the mushroom aroma was significantly reduced; when maltol was removed, the sweet aroma was significantly reduced—a direct testament to the key role of these ingredients.

· Sweet aroma: caramel aroma, sweet aroma (representative substances: maltol, 5-hydroxymethylfurfural)

· Floral aroma: Floral aroma (representative substance: phenylacetaldehyde)

· Sour aroma: sour aroma, sauce aroma (representative substances: isovaleric acid, acetic acid)
